Broccoli Ocean Soup Hor Fun

Ingredients:
3 balls of premium cooked fresh white Hor Fun
4 premium fresh oysters shelled and diced
5 small premium fresh scallops diced
100g dried scallops soaked for broth
100g dried oysters diced
700g premium fresh prawns shelled and de-veined
300g premium fresh chicken fillet diced
1 full stalk broccoli cut into florets
1/1o cup ginger sliced
1/8 cup garlic minced
1/8 cup shallot sliced
2 cup fish stock
1 cup chicken broth
2 tablespoon sugar
1/10 cup olive oil
5 tablespoon oyster sauce
1 teaspoon salt
1 sauce bowl of starch
Optional:
Bacon bits for toppings


What's Special:
Adding oysters, scallops and prawns enhances the richness of seafood delight tenfolds for an authentically thicken ocean catch- filled broth.

Method:
1)Pan fry the ginger, shallots and garlic till golden.
2)Add in the oyster,chicken, fresh scallops, prawns, broccoli, salt,sugar and sauce and fry for 5 mins.
3)Add in dried scallops, dried oysters, stock and broth into mixture and simmer for 25 mins.
4)Stir in starch for 1 min. Add cooked Hor Fun for 1 min.
5) Serve with toppings (optional) and a warm grin.
