Deep Fried Mini Honeyed Squids

Ingredients:
1 kg mini squids cleaned and blanced
1/4 cup tablespoon sugar syrup
Fried Sesame seeds


Special Sauce:
1 medium shredded carrot
100g premium bean sprout
1 cup premium sweet and sour sauce
1 cup honey mixed with 1/4 fresh lemon juice

What's Special:
The innovated sweet and sour sauce freshen the heavily sweet deep fried squid, leaving an appetitizing after-taste from the dish.

Method:
1) Deep fry the squids for 5 mins under high flame in a boiling pot of premium oil. Remove and drain the oil. Add the sugar syrup to the squids in a frying pan and fry till golden brown.
2) Heat up the ingredients for the sauce in a pan for 5 mins. Pour on the squid in the serving bowl. Garnish with sesame seeds.
3) Dig in with steamed rice or wraps best by the ocean.

Hokkien Fried Laksa














Portion: for a family of 4
Preparation time: 20 mins
Cooking time: 20 mins

Ingredient:
250g premium Laksa Rice Noodles
250g premium cooked Yellow Noodles

Sauce
150g high quality deep-fried dried shrimps
1 cup coconut cream
50g char siew cubed
100g fresh shrimp shelled and de-veined.
2 cups chicken broth
1 packet Laksa paste

What's Special:
Hokkien Fried Laksa is less spicy, sweet and more creamy.Unlike other Laksa which is soup based, Hokkien Fried Laksa is dry and fried with dried shrimps giving a rich flavour that makes one yearn for the typical traditional nostalgia of Grandma's cooking.

Method:
1) Boil the ingredients for the sauce on a pan under covered lid for 10 minutes.
2) Mix in the noodles and fry till dry and well mixed, with the rich aromatic choky fragrance going up in slow moving thick smoke.
3) Remove immediately from heat and "Laksa" with the family.

Chili Prawn Otah Barbecue in Banana Leaf

Ingredients:
Paste:
500g premium shrimps shelled and de-veined
1/2 cup premium sambal chili
500g premium shrimp paste
500g premium mackeral fish paste
1/2 cup salted low starch solution
1/4 cup sugar
1/10 cup lime juice
1/10 cup coconut milk
Wrap:
2 banana leaves cut into 6 pieces
12 toothpicks

Dip:
Sambal Chili paste

What's Special:
Add whole shrimps in the Otah adds crunch to the normal soft paste. Having lime juice balances the overly heavy and spicy Otah, making it an appetizer more than a hunger cure.

Method:
1) Mix in a bowl all the ingredients for Paste.
2) Separate into 6 portions and Wrap up the Paste.
3) Steam under high heat for 10 mins. Cool it down.
4) Barbecue the Paste in Wrap. Remove Wrap before serving Paste .
5) Serve with dip, baked hot dog buns, tea and salad for a family fiesta picnic.

Ingredients:
200g branded heavy chocolate syrup
1 teaspoon Brandy
1 cup premium Cocoa powder
1/4 cup coarse sugar
1 cup self raising flour
1 tablespoon baking powder
1 tablespoon baking soda
1/4 cup butter unsalted
1/4 flavoured nuts



What's Special:
The essence that is the cherry shandy that gives the spirit of the brownies an overwhelming warmth on the cheeks. The flavoured nuts makes the brownies less sugary and gives a more chunky feel.


Method:
1) Mix all ingredients well. Bake in a pre heated oven of 200 degrees celcius.

3) Stir, steep and remove tea bags after 5 mins. Bottoms up.


Extra Spicy Chicken Curry

Ingredients:
2 whole garlic pounded
2 whole onions pounded
1 set quality curry paste
1 set quality chilli paste
5 big washed potatoes quartered
1 small pre-packed quality coconut cream
1 whole skinless chicken washed and separated into 10 parts

This is a deliciously spicy and sweet dish that keeps 2 lovers and their love child on fire the whole night. What makes this dish special is the mashy curry the potatoes are responsible for and the equal portion of chilli paste as that of the curry paste that flames up the heat. Rest assured that peace still prevails in the family for I sure did with my spouse and child apart from much tear shedding. Bon appetit !

Method:
1) In a metal pot, fry till brown the garlic, onions and potatoes and add the 2 pastes fried till
fragrant.
2) Under mid flame, add the chicken and constantly stir the mixture for 5 mins, at which empty
the packet of coconut cream. Stir for another 5 mins.
3) From here onwards, keep stirrring till mixture becomes mashy, your potatoes should have
reduced to half the original size to indicate this.
4) Call your spouse and child to dished out the steamed rice or cut hard loaves .
