1) Pan fry the ginger and garlic till golden. Meanwhile in a steamer, steam the tofu for 10 minutes.
2)Add in the oyster, salt,sugar and sauce and fry for 5 mins.
3)Add in the water an boil for 5 mins under high flame.
4)Pour mixture onto steamed tofu and steam for 5 mins.
5) Serve with toppings and a big smile.

200g ginger juice
1 kg self-raising plain flour sifted
5 egg whites beaten
200g butter unsalted
2 tablespoon baking powder
1 cup coarse sugar
1 tablespoon salt
2 tablespoon cinnamon
1 tablespoon nutmeg
100 g finely grounded peanuts
Powdered sugar for topping

I can choose between an older ginger for a richer taste and younger one for more freshness.

Method:
1) Shred the ginger skin and process the juice.
2) In a mixing pan tray, mix the juice and remaining ingredients till of a smooth consistence.

1 box dissolved gelatin
8 strawberries halved

Reduce the quantity of sugar and you will not have a sunken in cake. Using fresh vanilla and fresh cream coating adds zest to the creamy cake. For a fresher taste, add lime to the topping and you will have a cake that is not enough to savor...

Method:
1) Add in the ingredients for the cake core and mixed well and consistent till smooth in a baking tray. Bake under pre-heated oven of Gas mark 4 for 40mins.
2) Prepare the toppings in a heated pan except for the whip cream and cooled till room temperature.
3)Coat the cooled and tri-layered cake core with fresh cream and on the whip cream, add the toppings.

High Tea Butter, Sambal and Chocolate Cookies














Portion: for 3 adults

Ingredients:
500g self-raising flour
1 tablespoon baking powder
8 spoonful premium sugar
2 tablespoon salt
1/2 slab medium premium butter
Room temperature water
3 spoonful sambal chilli paste
10 whole lime juiced and seeded
1 teaspoon Vanilla Essence
1 slab melted chocolate
1 bottle chocolate syrup


What's Special:
Adding lime juice to bake gives the fresh citrus aroma that floods the whole unit and reduces the heaviness of buttery in these cookies. So prepare for an appetizing feast of afternoon high tea.

Method:
1) Knead the flour, baking powder, butter, vanilla essence, lime juice, salt and sugar with water till a smooth dough for rolling is reached.
2)Separate into 3 portions of dough and roll them long.
3)Add sambal chilli paste into one portion, knead till constant colour throughout. Leave all portions to stand in the room for 20 mins.
4)Cut the rolls into bite-sized cubes and leave stand for 15 mins.
5)In pre-heated oven at gas mark 4, bake the cubes arranged on a baking tray for 15mins.
6) Dip one portion of cookies into melted chocolate and syrup mix. Chill for 15mins.

Valentine Hearty Orange Cake

Italian Prawns Pennells Olio Delight In Wok

Rich Coconut Creamed Laksa

Ingredients:
3 packets highest quality Laksa paste
1 small bottled premium Laksa chilli
1/2 small packet fresh coconut cream
200g premium dried shrimps grounded
5 pieces premium Dao Bok
2 blocks fish cake sliced
100g pemium small shrimps shelled and de-veined
1 stalk Laksa leaves finely chopped
2 soup bowls of chicken stock
500g premium boiled pre-cooked thick rice noodles
Peanut oil


What's Special:
The highlight here is the addition of coconut cream that thickens the whole soup. Having a rich cream soup base needs also additional dried prawns and fresh ones to balance the whole dish or the cream will be over whelming. Do make sure all ingredients are of high quality as indicated for the authentic difference to serve you right.

Method:
1) In a pot, bring the chicken stock to a boil under big flame for 10 mins. Concurrently, in a pan of hot peanut oil, pan fry the dried shrimps till fragrant.
2) Add into the pan in this order, frying continuously: small shrimps, Laksa paste, Laksa chilli, coconut cream and a ladle scoop of stock.
3) Transfer all mixture from the pan to the pot of remaining stock. Add in Dao Bok and simmer with lid closed for 5 mins. Add in the fish cake for 2 mins.
4) Remove and serve in 3 soup bowls of just boiled cooked noodles garnished with Laksa leaves for a family Laksa brunch.....

1/5 cup premium ground black pepper

Mushroom Pot n Noodles

500g premium soaked mushrooms with stalks removed
1 whole onion cut

1 cup carrot juice

2 tablespoon premium chicken powder
Salt to taste

What's Special:
The chicken powder added to the mushroom pot, enhance the flavour of the whole pot making it the depth of flavour and increased fragrance of rich chicken brew. Best served on a rainy day.

Method:
1) Boil mushroom, onion, garlic, chicken powder in stock for 10 mins. Add in the carrots and juice.
2) Add in the noodles and simmer for 5 mins.

Wan Tan Cha Siew Mee Dry















Portion: for a family of 4-5

Ingredients:
5 balls of cooked thin egg noodles(mee) cooled
200g Char Siew sliced.


Sauce:
2 tablespoon premium chili oil
100g preserved green chili
1 big piece old ginger juiced
1 cup premium sweet black sauce

1 cup chicken broth
1 cup ikan bilis broth
Salt to taste

Wan Tan:
30 Wan tan wraps
1 stalk chives finely chopped

Method:
